Carrot Pumpkin Doggie Birthday Cake

All pups deserve to have their special day celebrated! So why not celebrate with this delicious vegan pup cake!

Dry Ingredients:

1 cup oat flour

1 cup rice flour

1 1/2 tsp baking soda

1 Tbsp baking soda

1/2 tsp cinnamon


Wet Ingredients:

2 Tbsp flax with 6 Tbsp water (mix together and set aside)

2 Tbsp maple syrup

2/3 cup shredded carrot

1/2 cup pumpkin puree

1/2 cup applesauce

1/2 cup milk (oat, almond, or soy)


Directions:

  1. Pre-Heat oven to 350 F
  2. Mix all the dry ingredients together. Set aside
  3. In a separate bowl mix all wet ingredients. Add the flax egg to the wet ingredients.
  4. Combine wet and dry ingredients together, taking care not to over mix.
  5. Pour batter into an eight-inch spring form lined with parchment paper.
  6. Bake in the oven at 350 F for 60 minutes.
  7. Test at 60 minutes with a toothpick. If it comes out clean remove it from oven and let it cool in the pan. If not, bake for 10-minute intervals until the toothpick comes out clean.
  8. Serve with a dog friendly frosting
